Cherished traditions, family rituals and the perfect holiday meal brings on the spirit of Christmas. Delectable entrees like Orange stuffed Goose, Pork Crown roast stuffed with Apples or Turkey stuffed with a Rock Cornish Hen can be interesting on a Christmas or New Year holiday dinner table. Here is a recipe for Prime Beef Rib Roast with a soft creamy style Horseradish Sauce.

Pre heat oven to 400 degrees. In a roasting pan put your Beef with the fat side up and rub it generously with Butter, Kosher Salt, Pepper and One clove per pound of garlic peeled and grated all over. Roast the beef uncovered at 400 degrees for forty minutes and turn the heat down to 300 degrees. Roast until the meat thermometer reads about 145 degrees. Take it out of the oven and let it stand for about 20 minutes to set the juices inside. You could roast it some more if you wish your beef to be well done.

While the Beef is cooling off, prepare the Horse Radish Sauce.

1/2 Cup of fresh peeled and grated Horse Radish or already prepared one from a can.
1 Cup of Mayonnaise
Salt to taste
1 Tsp. Sugar
1/4 Cup Heavy Whipping Cream
1/4 Cup Chives cut in very small slices
Mix everything together in a bowl.

Serve with sliced Beef, enjoy!
