Mutton Cutlets
There was the “legend of the toothless Nawab” where a Moghul Emperor in India lost his teeth and could not chew properly. His dedicated chefs prepared Goat Meat Cutlets for him by pounding the meat into a paste and then cooking them with spices into patties. These cutlets almost melt in your mouth and are very flavorful. Here is a recipe:
2 pounds ground Goat meat or Lamb
I cup chopped onions
1 Tablespoon grated Garlic
1 Teaspoon grated Ginger
1 Teaspoon chopped hot green Chilies
1 Teaspoon Lemon Juice
1 Teaspoon salt or to taste
1 cup Flour
Mix all the ingredients except the flour in a bowl. Put these in a food processor and make a paste. Add the flour and mix it together well. Form oval shapes and fry them in hot oil in a pan or fryer. Serve with chutneys.
